Is there a FOSS app or an app that doesn’t collect the data and sell it, which can show exactly the data collected from an app with all the possible permissions that can have?

but, since all the apps in F-Droid are open-source, you can easily check.

you can see those, maybe try App Manager
I know that App manager will show what permissions an app has.
But the problem is that I don’t know what data they can see. Some permissions like the IMEI one, have been said that after android 10, third apps cannot get that. Although there are third party apps that still require that permission.
then find out the defaults for your Android version

use a search engine, android.com etc this information should be on the Internet, eg. ask an Android distro developer
