I mean an app that doesn’t require a phone number (such as Signal).
Please write your recommendations and experiences.

Yeah that works fine for many.
See snikket.org if you like Docker, it’s a packaged prosody so you can still use Conversations, Dino, Monal as clients.
(The snikket apps are old forks of Conversations and Siskin, better avoid them for now, fyi)

It’s still XMPP, only conference, plenty of free instances you can use
p2p, not that great in my testing, do offer feedback
p2p over Tor, no calls
