The suggested version is 6.603 which was added on 2023-10-15
There are two newer versions:
6.712 added on 2023-12-03
6.713 added on 2023-12-06
It is not outdated. 6.603 is the latest public release. 6.7xx are beta versions and therefore not suggested.

They look like normal releases. K-9 Mail developers could make this more clear, it’s really confusing. But yes, they are indeed beta versions.
Well, that’s what the suggested version does. It shows what is the latest stable version. So if there are other versions that are not suggested, they are not stable.
