Is there a way that on rooted stock ROM Pixel 6a I can make a system app a regular app? I have YouTube music app that auto updates even though I disabled auto update in Play Store, I don’t want newer versions because they removed some UI features and made it worse.
delete its apk from /system/app or priv-app or where it is?

You can either delete it as Licaon states above, or move it to /data/app. You may need to delete the app data or not. It works either way “afair” from my times. Just need to ensure cache is cleared and app forced stopped if using the app move from system of priv to app folder.
Making it a user app won’t prevent updates.
