I usually recommend people the Davdroid opensource app. But usually people hesitate to listen me because they say the need to pay for the app.
Can the app be downloaded in some manner which doesn’t require you to set the Android config “Install untrustable apps” as true?.

Yes and no
Android config “Install untrustable apps”does not exist any more since Android 8, now you have "allow this app to install apps’
So you get F-Droid from https://f-droid.org give it this permission once then install whatever you want
