In Calyx VPN description it’s mentioned that : “Both the client and server are 100% free and open source software.”
Is it same for Riseup VPN as well? Where is the server source code for both the apps?
They’re part of the LEAP project.
The Bitmask app can use both Calyx and Riseup servers.
Also the New York server in the Riseup configuration is the Calyx server.

Calyx VPN: When the VPN connection is active, all the servers on the internet will see you as originating from an anonymous IP hosted by Calyx.

You have to understand that whether server is open source is only relevant if you are running your own server and you’ve compiled software yourself. That’s because all other server builds have no way of verifying if the binaries running on that server correspond to publicly available source. In other words, regardless of the source availability, you must TRUST the entity compiling the software.
Yes, I think it’s one of the reason F-Droid marks apps TetheredNet AF if the server/services are’t self-hostable. This type of AF helps users to create their own threat model.
