I have an HP Laserjet pro printer. I want to scan documents from this printer to my smartphone /LineageOS.
How can I do this? With an apple smartphone I installed the HP app and it works, but with my smartphone under LineageOS is there a free/opensource application?

Disclaimer: I don’t know about scanning and printing with Android, but I was interested enough in the question to go and look for answers.
If the printer supports scanning using the SMB protocol then I guess the Samba client might be helpful, though it seems that it’s only useful for file transfer.
If the printer supports eSCL then something like this tool could form the basis of an app to do scanning. There are also clients written using C# and Mono.
