It would be nice to be able to set certain packages “on hold”, IOW, to exclude them from updates. Something like this command in Debian package management:
echo "<packagename> hold" | dpkg --set-selections

Isn’t that basically the “Ignore this/all updates” function that already exists?

Oops, I searched for this option, but indeed, I found it. Thnx! Apparently I need “ignore all updates”, I hope this does not affect “all packages” instead of “all updates of this package”.
Now that I’m busy writing this: what I miss is a categorie “installed packages” at the “categories” section. Did I overlook this as well?

No worries, it does the latter. 
Well it’s not in categories, but in Settings → Manage Installed Apps.
Yes, indeed, not quite an obvious place IMHO…
